going to buy a new to me rig..can some body tell me what the evap rate per sq foot of pan is whether it is flat or flued??? thanks mike

My 3x7 flue pan (7" deep flues) does about 90 GPH soooo..

90 gph / 21 sq. ft = 4.3 gallons per hour per square foot.

Depends on the set up. I get around 1 gallon or less per square foot. But I do not tend the fire as well as I should and I only do around 100+ gallons of sap at a time.

When I had a flat pan, I was averaging just under 2 gallons per hour with it. To get that rate though, I was firing it every 10 minutes.

On my 3x8 with a 3x3 syrup (flat pan) and a 3x5 flues pan raised flue with 10" tall flues, I evaporate between 75-80 GPH.
On a flat pan if fired properly there is little variation in rate, but when you combine that with a flue pan there's a wide range of evaporation rates. It depends on the type of wood, the firing rate, the split size of the wood, is it dry enough and is there air over fire (AOF) or air under fire (AUF), do you have a pre heater and so forth.
