Can maple cream be frozen for long term storage ? I have a customer that wants to freeze it so she can ship it to the far east . Is this a good idea ?:confused:

Since it is concentrated syrup I don't think it would freeze solid . It may get a little grainy?

Freezing will do no harm. I usually have at least half of a chest freezer full all the time. The thing that gets harmed is the label. A good quality label is a must not so much for the freezing, but the thawing. Poorer qualty labels will wrinkle up with the condensation that accumulates on the thawing cream jar.

I agree with Lew. A high quality label is a must. I label mine when I make it and into the freezer it goes.
If you are going to ship it remember that as it thaws it will sweat so allow from that. Ship it priority and let the recipient know to refrigerate as soon as it arrives
