How does a hood increase the evaporation process? Been reading a lot about them but as long as steam is coming off the pan how does hood increase that gph?

Very simply keeps more heat in. And by a increase it is probably not much, maybe in the 5%ish range.

Think of it as a covered pot versus an uncovered one boiling on your kitchen range at home. It also allows you to install a pre-heater or steam away.

What does a steam away do? It seam from what I've read a hood increases gph by upwards of 45%. Or maybe that's with a steam away.

Steamaway is another pan that sets over top of the flue pan, There are pipes that the steam from the flue pan is forced to move through, the pipes are mounted horizonal, and the steam doesn't like to flow this way so the pipes get really hot. There are trouths that have sap in them which fit around the steam pipes. This gets the sap very hot then air is injected through a smaller pipe to break the surface tension of the sap and make a false boil, causing the steam to release and water to evaporate. Giving you slightly concentrated sap before it gets to the flue pan.
