View Full Version : Ropy Syrup--please help

We were given our batch of almost finished syrup to boil up at home. The guy who had it let it get to warm and it got real ropy. I boiled it down anyway because I couldn't find an authoritative source on whether or not ropy syrup was totally ruined or not. Long story short, it boiled down and doesn't appear ropy now but when you pour it, its quite ropy. The taste is FINE...so the question is: do I really need to throw it out or (as our friend put it) "just don't give it out as a gift." Any advice would be greatly appreciated as I really don't want to have to waste 3 gallons of syrup....

Any harm in consuming it as is?

No it is just heavy! Did you try a hydrometer? I but it is very heavy. Makes great baked beans.

I had some that was rather ropy in my last batch, when 3/4 done, but after finishing it, there was only a very slight hint of ropy. However I sold it bulk, since I thought the syrup had a hint of off after taste. It graded as dark amber and paid $2.50/#. I was pleasantly surprised. After they graded it and tasted it, they found nothing wrong. I just didn't think it was as good as my usual so I bulked it out.
