Okay, the season is long over... What do you do at the end of each season to be sure that things are in good shape for the following season?

For example, the front of my sugar shack is open and the evaporator does get some rain. I plan to move it back, but aside from that is there anything I can do to protect it?

I clean all equipment and place a cover on everything (I had SS covers made for the syrup pan, spare syrup pan, draw off boxes, cold sap float box, finisher, 2 draw off boxes on finisher and the canner. Also have a hood on the flue pan.) The filter press pan also has a cover. I still start the next season by cleaning everything again before the season starts.

I lift the pans up off the arch and put blocks of wood under it to avoid corrosion from the arch rails. I also put a piece of plywood over each pan and float box to keep the mice out.
