View Full Version : Maple Cream - minimum batch size ???

Looking to try making some maple cream, and I'm wondering what is the smallest batch size you can reasonably make. My friend and I only have 25 taps and ended up with 3 gallons of syrup split between us. I don't want to risk losing a significant amount of my syrup trying to make a batch of cream. Would like to limit to a pint if possible, a quart at most.

Any tips or advice would be greatly appreciated.

Just heat it in a smaller pot. I would think using a quart would work then

Yes you can make a small batch and use a smaller pan, the issue is getting a pan that is small enough so you can have a decent depth but at the same time a taller pan so you can boil it harder. You can use defoamer but a tall pan is best.
If you have to boil it slow it may be darker but should still taste good

Quart is plenty, just have to get an accurate thermometer reading in your pan 23 degrees F above boiling temp of water has worked well for me. I cool to less than 75 and stir, sometimes taking 45 minutes or better in a kitchen aid mixer. I think a pint would be fine also.
