I finally boiled my concentrated (was stored frozen) Black Walnut & Silver Maple blended sap today in a 26" diameter carbon steel wok, on my adapted turkey fryer. I couldn't be happier with the results and speed! The boil rate was 2 gallons of 7% brix sap all the way to completion (hydrometer) in less than 1 hour, with the flame set on "low" after boiling started. The finished color was dark amber and the flavor is entirely butterscotch (with a maple flavor aftertaste).
