I am throwing around the idea to make a pre heater, instead of using a drip pan, could a person run angle iron that would be wider then the pipe straight under the tubing about an inch to catch the water and have it flow to on end to drain out? And is there any rule of thumb on size of copper tubing and the size of your pan?

Many use a single "gutter" under each pipe, but angle iron would be a reap poor choice, you will get rust in th sap boiling underneath. They should be aluminum or SS.

Yes it would be either SS or aluminum.

Now I was doing some research and reading and found a table of specs of a parallel flow pre heater (http://www.fs.fed.us/ne/newtown_square/publications/research_papers/pdfs/scanned/OCR/ne_rp388.pdf) On page 8, what dose it mean by "head" on the table of specs?
