I have a genius for a hubby!
Finally got it all done and now we are watching our temps regulate more and more! Night time temps are right on the edge of perfect.
So we pulled off two layers of steel from the top, along with the insulation. The old chimney was removed and a patch riveted in place.
A new hole was cut in the back and new pipe installed.
Now we just need to adjust where it sits, and cut the hole in the roof!
We also have firebrick to adjust the level the fire sits at, if we need to.

Do the pans get open flame on them or is that a metal plate under the pans?

No. We did open flame in the past and its harder to keep the syrup from getting to dark. It has very think sheet metal under the pans. And we plan to raise the bottom if needed. We need to do a long test run with water still. DH did a short one and it seemed fine.
Birch is fussier then Maple :D

Trees started dripping today, so we are giving the stove one last adjustment and test run with full pans of water. Boiling sap by morning!

So much sap this year, that we added a second stove. Used an old file cabinet.
We will be selling our house very soon, and look forward to getting a "real" evaporator in the future!
