I am wondering if running sap through an RO then trough a Steam-Away would work, or if by the time it got to the evaporator it would be too close to syrup.

Many do that already ,its a common practice. Its not nearly syrup 2 to 20 % sugar hitting the steam away ( depending on your concentration rate ) you just produce more syrup per hour.

In fact, likely very few producers with a steam away, don't RO first. That is the most common set up for those with a steamaway. RO, then steamaway, then flues pan etc.

Yup, that's how I do it. Works great. I concentrate sometimes to 17, and everything runs like a dream, except for lots of niter buildup.
