Currently boiling. Keeping pan with roughly 10 gallons in it and have only put roughly 50 gallons in so know it's not ready to draw off for a finish but boil is temping at close to 230. Is this ok or should we back down heat?

do you have a hydrometer to test it, it should be syrup at between 219-221 deg. depending at what temp. boiling is today.

Think we found the problem. 15* air gap in the thermometer. Now it makes more sense! Hydrometer is next on the buy list for sure.. Thanks a lot

I was 221 degrees today before the hydrotherm said syrup.
