What gauge stainless steel?

Looking at welding up a stainless steel steam pan for my barrel evaporator. What demensions would you guys recommend and what gauge steel? Thanks!

20 or 22 gauge

20 gauge if your an experienced tig welder if not use something a little heavier remember to back gas your welds with argon to keep them cool or they will get the black sugar and be difficult to clean
