This question is for the people who let their syrup settle and then pour off the clear.How do you pour off with out disturbing the mud on the bottom?Also is the syrup room temperature or stored in the fridge and for how many days until the sand settles.I only do small batches and filtering soaks up a lot of syrup so I want to try this method to see how it goes.Thanks for any help,this is a great site.

I filter using the settle method. I finish the syrup and bottle in gallon jugs. Technically they are done and good for 1 year at room temp. I let them settle and rebottle them into smaller bottles as needed. About 1 week is very good. 3-4 weeks is crystal clear. Pour off carefully so it does not 'glub' and magically the mud stays at the back. Out of a gallon, I'm able to pour off 85-90%. The mud goes into a mason jar in the fridge to settle until I decide to bottle another gallon at which time I'll pour off the top of that. Eventually I filter the mud with a coffee filter. Nothing wasted, beautiful syrup. And no waiting. Sort of.

If you collect or process sap with lead-containing materials, much of the lead is sequestered into the niter. If you leave the syrup in contact with the niter, it will re-dissolve some of lead, thus increasing the lead in the syrup. The longer it sits, the more lead the syrup will accumulate. In that case, it is best to filter the syrup immediately after production to maintain a low lead level.

That's what I love about this site, always learning something.
I never tried the "settle" method and don't think I will.
Get the proper wool filter and prefilters,,,and use the freezer trick, great clear syrup instantly, no lost syrup.

Freeze the filter between batches.

Ok I have never heard of this either. What does that do exactly?

ADK I think your teasing, but I will explain for anyone who doesn't know. I learned it here and do it.

When I filter my syrup, using a prefilter and the wool filter, let it all drain as best as it can. Don't wash the wool filter, freeze it in a plastic bag.
Next batch your going to filter, pull it out of the freezer and dip it into hot sap or your almost syrup to unfreeze it and get it soft again. Keep freezing it until your done for the season.
When you do wash the wool filter, don't wrinkle it, don't twist it. Rinse, rinse and more rinse with just water. Good for years.
