I'm outside boiling on the kettle tonight, and just may be a little lazy.

If I have 4.5 gallons of sweet that tested out at 50 brix at 50F. How many gallons need to boiled off before I have syrup????

Just in case anyone is wondering went from 50f to 216f in about 35 mins. Temp outside was 47f to start.

If you're going to 67 brix you need to boil off about 1.5 gallons. According to the revised rule of 86 (now 88.2)
