I'm almost out of sap and have a good boil going in my 2 x 4 evaporator.

I haven't drawn off yet. I don't anticipate a tremendous amount of fresh sap based on the weather report.

So - what would you do?

I'm thinking of shutting the damper, flooding the pan and heading out. I can boil whatever is in the pan on my stove.

I also have some ice that I'd pulled out after the sap froze in my storage barrels. I could out that in the pan just to be safe.

The weather forecast constantly changes. I would give it a day or two and see what happens. I have had a couple days with sap runs and it did not freeze the night before. What is the boil rate on your pan out of curiosity?

I'd say probably 6-8 gph. I've never done the calculations before. But based on the # if hours this weekend and the amount of sap, id say that's a reasonable guess.

It worked out fine - flooded the pan and shut the damper. Came back a few hours later and it had reduced nicely.

I finished it in the stove and bottled last night.
