should one buy , build an air injector for the back pan ? If you have one what are the advantages and disadvantages ? Thanks . Mike

I use one and don't us any defoamer any more. I looked at that report and it said you still need defoamer but I don't know how they came up with that. Talked to several producers that installed air injection and quit using defoamer. I have some close by just in case the blower goes out. Lighter color syrup and I can not tell a difference in taste.

Do you have them in all pans? We were on the Vermont Maple Rama tour a few years ago and on one stop they had air injection. They were talking about not needing defoamer and it made it easier for them to go organic. We decided to give it a try.

I built one for both pans last season, http://mapletrader.com/community/showthread.php?20529-Bubblemaster-1.0! . The improvement in syrup color was noticeable immediately and the flavor profile has remained the same for the color of syrup that I am making. So far this season I have made all medium syrup while others around me are struggling to make dark and most of their syrup has been B.
I still use defoamer at times depending on the sap. I have had a few boils where I haven't used it at all and some where I have used it very little.

2 of the evaporators we had air in both flue and syrup pans. The other one just the flue pan. They do make alot lighter syrup.

They sure do make lighter syrup but in this area no one wants light syrup. The buyers quot a higher price for light but the catch is they don't want it. I have so much light left over from last year that I could not sell it is really getting in the way.
