Just wondering if I can store bulk syrup in plastic buckets. Basically temporarily until I could sell it.

Sure as long as they are food grade approved for hot pack

I use 5 gallon plastic food grade buckets to store my almost finished maple syrup. But I have access to a walk in freezer, it gets real thick but does not seem to freeze its to sweet.

We often pack 50 + gallons in food grade plastic pails, then into the freezer to repack over the summer as sales demand

An HDPE plastic pail and a clear plastic bottle are different animals made of different materials. As someone else already said, if you want to use plastic bottles make sure they are food safe at packing temps. If there's a recycling # on the bottom you'll know what it's made of and can do some research on temp ranges.
