Looking at the forecast for the next 4 weeks and listening to the radio, it looks like sap won't run for another 3 weeks and there calling for another 3 polar vortexes. My question is did I put my taps in to early by putting my taps in too early? Yah bacteria colonized very slowly at cold temperatures but three weeks is a lot of time. I'm more concerned about my bucket spiels letting in too much bacteria. I have about 20 gallons of sap and am hopping to boil this weekend after putting the finishing touches on my evaporator.
