I put lean two on barn and without thinking used osb on roof then shingles. Am I going to regret this because of all the steam and if so what can I do till I make a hood next year.

get a hood (or make one) and it will be a non issue.

A builder friend refers to OSB in a humid environment as "smorgasbord for mold".

Yes, even the steam that leaks past a hood will cause the osb, old sh!t board, to fail. I used high quality tongue and grove and sealed with two coats of paint for a floor and go 10 years.
In a non moisture environment it will last 15-20 they claim. In a moist location you are looking at less.

For this year ventilate the shack well in the spring and as much as possible during boiling and airless paint the underside to seal it to get the most you can.

Other option is to use metal roofing on underside to make a moisture tight ceiling. Paint used tin white for a bright sugaring room.

Okay thanks have not bought shingles yet maybe use it this spring then take osb off and I will put on metal roof.

Unless the osb comes off on it's own. ;-) Lath and metal sounds like a winner.

The level of highly toxic materials used in OSB, would prevent me from using it in that manner. maybe you can come up with something to clad it on the inside.
