View Full Version : White cloudy fuzz bottom of syrup

After boiling down a batch in my pan to almost syrup, I poured the batch thru a pre-filter & filter into a pot to finish on stove. When it hit syrup, filter it again into glass mason jars. Two days later there is a white fuzzy cloud on the bottom of all my jars & my syrup is clear .Could anybody tell me what that my be? And how to correct that next time? Thanks for all your help

It is almost certainly niter. It can be a fine cloud, that hovers near the bottom. I looked at some under a microscope once and it was tiny crystals.
If you filter hot and avoid reheating you should avoid it. even heating to below boiling can create more if you are using direct heat like on a stove. Avoid that by using a double boiler.
