Well....I finally did it and wasn't paying as close attention as I should have. I was 3 hours into a boil on Tuesday and I had a overcooked situation. My front pan wasn't being fed properly since I was toying with the float box level and it went to a burn.

I was quick on diluting the front pan with sap but the liquid that remained was very dark. I drew off about 2 gallons of the dark stuff, filtered it and put it aside.

It doesn't smell burned, only dark. should I introduce that into a future boil and dilute it?

any thoughts would be appreciated.

thanks in advance.

What does it taste like? If it tastes OK and you want dark syrup then throw it in your next batch. But how close is it to syrup? Would it be worth finishing off by itself maybe in the house? If that isn't practical, if it were me I'd probably try to freeze it and throw it in my last batch which tends to be dark anyway.

Better luck with the rest of the season:)

But if it is burnt, it is burnt.

I've done that very thing. If it taste fine and smells fine then use it. I wouldn't mix it with any other syrup unless you want to mix it on a late batch. It will turn everything dark. I kept mine for personal use and gave it to family, no one complained. Sometimes your lucky and get the burn stopped just in time. Mine was really heavy so I cut it to proper density and it kept just like regular syrup.
