I finally tapped my trees yesterday & got 2.6% from Silver Maple and 3% from Black Walnut! Everything I've read said expect very low brix from Black Walnut, so this is a surprise. I recalibrated my refractometer twice and came up with the same results. I did notice a very slight amber color to the walnut sap (almost not noticeable). I don't know if that's normal...

With your black walnut sap, is the flow about the same as maple? can you boil it the same way or do you have to steam it away like birch?

Black Walnut sap is processed exactly the same as Maple sap. So far my Black Walnuts are producing 3x the sap volume, most likely because they start flowing earlier and keep flowing later each day than my Silver Maples. I'm guessing this will change when the weather gets warmer and the maples really wake up?
