Does anyone know how they "sterilize" maple sap so they can sell it as "Maple Water"? If you haven't heard about this more info here http://www.huffingtonpost.com/2014/02/20/maple-water_n_4824369.html and

At $18 to $19 per gallon I see no need to boil sap down to syrup.:lol:

It's ultra pasteurized at temps around 275*F

How would you get sap pasteurized at 275 deg. wouldn't you make syrup out of it at 219?

No, It's only brought to that temp briefly. I assume under pressure, just as in a pressure cooker or autoclave. Temps at least that high are needed to kill bacterial spores.

I was just at a home show in northern Vermont today, there was a vendor there showing off his Maple Water. I quizzed him a bit, but he wasn't too forthcoming on how he did things. He and his booth partner did both say that the water is the water from their RO. I asked him how it was purified, he was a little reticent, but ended up just saying that the RO water is pure as it comes out.

Tried a sample of blueberry flavored. Not bad, but not much maple flavor came through.

They may call that maple water but that's not the same product we're talking about which is plain old raw sap. It is neither run through an RO or flavored. Here's an article about it
