After last season I decided to try and expand my scope of syrup making. My trees on my property are mostly in wooded areas and just do not run very fast and furious. As an example my heaviest output last year on 35 taps was 15 gallons of sap...I worked out an arrangement with my friend to let me tap his trees and I’d do the boiling for both of us, he was also a home sugarer but has sold his evaporator and is letting me handle the bulk of the work. His trees are also much bigger producers...as an example yesterday just one of his trees gave me 8 gallons of sap. We also got access to some more land in Pelham that has a ton of big maples right in a clearing. So yesterday, after the nice warm up and collecting all we had, I got 35 gallons of sap. Kids had school activities last night, but I was able to start boiling around 730 and stayed out until 11 going through about 15 gallons. I just concentrated a bunch down, but the color looks amazing and I wanted to share some pix. Hopefully the cold tomorrow will give them a nice recharge to start flowing again.

I have about 40 more gallons to boil through and will start much earlier tonight, the snow storm really shouldn’t affect Southern NH too much, I can deal with a little rain. Might be getting some Apple Pie Moonshine to keep me warm LOL
Oh one more thing, I was pretty excited...the gentleman I got my evaporator from told me he had never been able to get the back pan to boil, but never really ran the stove that hard...last night I had both pans boiling and was very excited about that!!!
