What are the benefits of having a steam hood over a cupola? Which do you all prefer?

The steam hood keeps the temperature up
it does not let all that moisture into the shack where it can and will do damage
I had a cupola and prefer the steam hood.

Have boiled a lot with both. I like the hoods. We have almost no steam in the evaporator room using hoods. We are releasing about 100+ gallons of steam an hour. It would be like a sauna most days with a cupola:)

From what I understand with a steam hood, there are lips to collect and condensation at the bottom of the stack and the bottom of the hood, correct? Or is it just at the bottom of the stack?
