In 2011, a research team led by Navrinda Seeram at the University of Rhode Island found a high number (54 in total) of healthful compounds in maple syrup and 5 were deemed unique to maple trees (and one that they named "Quebecol" was found only after boiling the sap). He says:

“I continue to say that nature is the best chemist, and that maple syrup is becoming a champion food when it comes to the number and variety of beneficial compounds found in it. It’s important to note that in our laboratory research we found that several of these compounds possess anti-oxidant and anti-inflammatory properties, which have been shown to fight cancer, diabetes and bacterial illnesses.” Full article here (http://www.uri.edu/news/releases/?id=5758).

This research helped elevate maple syrup to "superfood" status in 2011 by the Functional Foods Center (http://functionalfoodscenter.net/).

Forward 3 years. The New Nutrition Business (http://new-nutrition.com/) writes a yearly $400 journal on nutritional trends for food companies. The top of the 12 trends in this year's publication is a sector called "Naturally Functional". Functional Foods are those that provide some medicinal or health benefit and this specific consumer trend is finding "Natural" sources for these types of products with single-source or minimal ingredients (like maple syrup or sap!) being the most desired.

Julian Mellentin, a Director at the above research company, said “With the right marketing and distribution strategies, these new waters will be a $2 billion (€1.5 billion) business by 2025”.

So we might expect that Maple Water will hit the shelves in a big way. That means that some on this forum will stop boiling and start bottling and many on this forum will be selling sap to these new sap bottlers. Prices and/or production will go up for sap. If the maple drink really takes off, people may prefer to buy concentrated maple sap and just add it to water at home. Is it crazy to suggest that much of our maple syrup will be labeled "Maple Concentrate -- Makes 10 gallons of maple sap"? I know I drink at least as much with water and lemon as I do over my pancakes...
