You'll be fine. You don't want to retap the same trees whatever you do becasue you'll cause double the damage..
Last year I tapped early during a stretch of warm weather and had some decent runs. Then the weather turned and several weeks went by until the flow restarted. I still got all the sap I needed once the trees woke up again. Like Sweet Creations said, just be patient. You can always tap another tree or two later if you have them and feel you need more sap. Just don't fool with the taps you already put in this year.
Get ready because it's coming! :)

Does this cold keep them from healing?

Does this cold keep them from healing? You shouldn't get much taphole contamination when its this cold. I started tapping Jan. 5 this year and had about 75% of my taps in by the end of Jan. We use cv's and run high vac. I am not worried at all. They will run good when it warms up.
