Just wondering since our rig was specially designed for our sugarhouse with a 90 degree elbow in the ductwork going to the AUF, could I put an even bigger squirrel cage blower on with variable speed motor, or could I possibly upset the balance of air by going too high?

Yes you can definitely put too much mair under the fire. But if you have a variable speed blower or damper in it that would solve the problem.

What would too much air do and how would you know, seeing as everything is completely sealed?

Too much AUF will make you stack temp soar. It will sometimes decrease the boil in the syrup pan and you will see a drop off in GPH.

I cut a 6 in hole in my stove box to accommodate my stack, which is 8" X 8' on a 2X3 1/2 pint. I read somewhere that someone had obstructed his stack hole to get more heat into his pan...I have my arch ramped to the bottom of my stack hole. Should I push it up higher to increase my GPH?
