Why are copper evaporator pans not used?

They are, but they are expensive, harder to keep clean and not as durable or corrosion resistant as stainless so they arnt very common nowdays

So if I were to make one, how thick should the copper be?

There are copper pans for sale in the classified section right now, if they were closer I would consider getting them even for scrap as the cost of copper is so high.
