SO I did a test boil on the new 2 X 3 Phaneuf divided pan and I'm pleased but one thing has me concerned...there is a LOT of steam coming off this pan and I cannot see the sap level. I imagine I need some kind of float to valve more sap from the preheater but I'm hanged if my limited engineering skilz can help me picture how that might work....does anyone have an ideas on very basic float valve engineering?

Even with a float system you may still need to visually evaluate the sap level a lot. I would suggest a very good flash light. Also a dry stick can be used to measure the sap depth.
We boiled in a sugarhouse where you could not see anything above the evaporator. Someone would come in and you would have no idea they were in the room unless they said something or you saw their knees:)

I would add a sight glass first, and also a float valve many types are available from Mcmaster carr or other suppliers, ebay etc
