So last year I bought a clamp, 5/16" bit with threaded handle vice grip thingy. I have some different saddles that require a bigger hole, Now thats clever, by an expensive tool just to find out the saddle holes now need to be bigger. What do I do?

Not much you can do since you bought the tool a year ago. Maybe trade with another "Trader"?
Unfortunately this seems to be a trend in the industry. A good example is tubing/fittings. Some fittings are larger than others, and don't fit well into tubing made by other companies. Even for those that do fit, without a tubing tool, it is almost impossible to get a good vacuum-tight connection.

Find out what size hole your manifold requires then buy a bit the correct size.

To expand on the post by Dave Y,
Many of the manufacturers can supply the bit in different diameters. The bit is usually mounted in a fine-thread bolt with a crank on it. See if your brand can supply the one you need.
Many here have made their own "V" block to guide and stop a regular drill bit in a cordless drill. Some even out of wood.
