In the past I have used 7/16 stainless taps and buckets. This year I bought some 5/16 tree saver taps from sugarbush supplies. I am assuming you use a 5/16 bit for the holes. Just want to be sure. Thanks

You are correct, but make sure you use a maple bit.
It makes a cleaner hole

I've actually had success with 5/16 brad point bits
