I had a request for unfiltered B grade syrup today. Have any idea what a consumer would want with that??

they might want it for making beer or organic type food last year I sold 15 gals of grade B to a local micro brewery guy , he said it makes great beer ( and the price was a bit less ) I would have asked out of curiosity

Maybe the idea that the sediment has some nutrition benefit?

Actually, niter is high in minerals, particularly calcium, but it is a small portion of those in the syrup.
I am in no way saying don't do it! Just should know that in VT it would be against maple laws to sell unfiltered syrup.

I agree with Wiam, be a little cautious unless you know the person. Research your states laws. It could be a maple sting.

I would also suggest extra caution and consideration of the equipment used to collect and process syrup before using or eating niter. Heavy metals like lead and zinc will end up in the niter if the sap/ syrup has come in contact with them (such as lead if used in solder and zinc in galvanized equipment.) That's why prompt and adequate filtering is important but not fail safe.

Well this is a very simple request that is becoming more and more popular with time.
The taste of unfilter syrup is very similar to the store bought &%^, that is commercially available. Sorry about that.
Is this person a butcher that is looking to smoke meats. I have a guy that uses unfiltered B for smoking, meats that is. Wow I can see it now kids on the corner with syrup dripping out of a rolled paper joint trying to light it. LOL
In honey, raw is used for burns and should be part of every maple producers first aid kit. It is amazing!
The problem is that people have a perception that by filtering we are taking out sugars...which I know we are; but it is the minerals that make up the nitre/sugar sand that is the possible bad issue. I know a lady that is suffering from Zinc poisoning. It is a horrible, debilitating issue. So keeping away from additional zinc in the diet is a good thing after you have met your RDA.
So if in your state you are not breaking a law and your equipment is totally lead free and you label it unfiltered I don't see an issue. If you have leaded pans, galvanized equipment I would just say sorry I don't have any available; but when I do I would be happy to call you. Get his number, change your equipment and tap that market!
Good Luck!

This is only a guess but I had a similar request they wanted my darkest unfiltered. They explained they were on some health cleans were they used syrup and I believe it was lemon juice mixed for a multiple days in a row. Just a guess.
