Affordable is relative... They all seem to be pretty pricey Leader 18 gallon canners seem to be most economical. Lapierre canners seem real nice. These are the only 2 that I have seen in person. Lapierre jump from 12 US gallons to 29 US gallons and up. I do not own one, I will be saving up for a lapierre. Cannot wait for the confidence that every bottle was canned correctly, without rushing.

Yes definately....the thought of being able to keep temps consistent would be great....but at $1000 it's hard to justify....

Give smoky lake maple a look! His stuff is beautiful! Prices seem to be very competitive! http://www.smokylakemaple.com/

We just bought a 32 gallon water jacketed canner from sunrise metal shop. It's a very nice unit and they have good prices

Does Sunrise make a electric water jacketed canner or are they gas? We will be looking for one next year, but I want electric, better to control heat than with gas.

I also have one of SmokeyLake's canners- the 6 gallon unit. It's worth every penny and does a wonderful job.

Another option is to look at honey equipment distributers like dadant and mann lake. They have wax melters which are stainless steel electric water jacketed bottlers for cheaper than maple suppliers. I found a used 10 gallon one on craigslist for $100.
