This year I'm going to try to keep up with 500 taps. How should I keep my syrup for storage? 5 or 15 gal jugs? Plastic or stainless? I will be filtering off a 5gal flat rack filter canner unit and also have a single cone filter canner. I boil on a 20x60 drop flue set up and will be running a small RO.i would like to save 50 gal to sell through out the year and maybe sell the rest wholesale.

I did 5 gal plastic last year, if I re use them I will store in basement where its cool not in sugar house. If I can afford it I will buy 15/20 gal stainless barrels not cheap but way to go
wholesale syrup you want larger barrels, bulk houses deduct money from each pound if you bring them 5 gal jugs
Stainless is best, but it is more $. Maple Grove now wants 30 or larger. On your scale I think 5 would make it easier to keep grades separate. I like my 15 because that is about what I make each day.

Look in the classifieds. I have some 5 gal SS Corney kegs for sale that were converted to seal on vacuum. I no longer use them as I now pack in 40 gal SS barrels.

Plastic for bulk storage is useless unless you will put them directly into the freezer. SS is the only way to go.

i use plastic for the bulk that i plan to sell soon but i agree that for long term storage its not the best

We have similar number of taps. And keep syrup in 2.5 gallon plastic jugs in the freezer then can 4 or 5 times per year. Easy to keep the grades and flavors separated too.

Best thing I can offer is it is what best fits your operation. How much you make a day and how much you can heat at a time to hot pack are basic factors. You are not going to want a container that is to large for you to the point where it takes you 2 or 3 days to fill.
It is nice to be able to filter and hot pack all of the syrup you make in a day so you dont have to re heat syrup. Every time you re heat it is gets darker. And it uses more energy to re heat As for type of container yes stainless is better and is not going to allow light through like plastic will causinng the syrup to darken over time.
Also if you are going to keep some of it refrigerated then it can be cold packed.
