I know the obvious info about sap spoiling based on sanitation and temps. Im curious if a bucket or collection point can hold sap for like a week if it has a daily flow of fresh sap going into it? Does the sap begin its spoil clock as soon as it leaves tree or once its moved off the the feed line?

Cody,
I think the clock starts ticking when the sap drips off the end of the spout.

Cody - Sap has sugar in it - The air we breathe is full of wild yeast and bacteria that just love sugar - especially if the temperature is right. Also - many insects love liquids with sugar. The trick with sap is to keep it cold and in the shade and boil as soon as You can. In warmer weather the sap can start to break down rather fast if allowed to warm up. -----Mike-----

LOL :) Clowns! ---In my little part of Michigan - I may never get the sap to leave the roots. Let alone into the tree where I can borrow some of it from Mother Nature. This has been one C - O - L - D Winter with lots of Snow. Warm enough to spoil sap is hard to imagine at present. LOL ----Mike----
