i am building a new 2x4 evaporator and have a question regarding the base stack. what is the ideal final size of the pipe leaving the evaporator. i have an opportunity to get all the stove pipe i need but it is 6" diameter. i feel that may be too restrictive. any thoughts?

That should be fine. If it is restricting, you could make it higher creating more draft.

If You can get all the 6" you want for free... think how cool a double barrel evaporator would look.

i've been cooking outside for several years and have had enough of sitting in in the rain under a thrown together shanty. last year i did gave a double barrel stack and it did seem different but i am not to sure on safety codes for that as i'm moving inside this year. i have an opportunity to get triple wall stainless and would like to do it right. i do plan on having a small forced air setup on the evaporator. i just dont want to go through the hassle of proper setup and then find out it doesnt flow right. thanks for the input so far guys.

That's fine for a 2 x 4. Height is more important.

My 2x4 arch has a 6" chimney. No problems after two years.

8 feet should work fine, basically 2 x the length of the pans.
