Is 16 or 18 gauge preferable for the bottom of a front pan.Need to build a 3 section cross flow finishing pan to replace our old one which has had a lot of syrup put through and and has been burned once to often. Our old pan will make a nice back up pan.

I think most commercial made pans are 22 gauge.

Use the thinnest material you can work with. Im using 22 ga stainless and loving the welding :lol:.

Let's see the work! Welding 22 takes lots of skill, god knows I can't.

It's not to bad if you keep your tungsten sharp and your heat low.
