Might seem like a simple/stupid question? can some tell me the difference and advantages or disadvantages to drop flue verse raised flue evaporator. I am currently boiling on a 30" by 6 ft flat pan but want to up grade to a flue pan. I currently have 350 taps out but can go to probably 5-600 what size pan do you recommend. I use wood for heat. No R.O. maybe in future. thanks for any help.

I like the simplicity of the smokke/heat flow of a drop flue. On the raised flue, heat has to go under, then up, then back down, then up the stack. On the drop flue, it just enters and exits in a straight line. Draining a drop flue is more complicated and problematic,tho. Each type must work, they sell lots of both.

I've got a 30"x7'drop flue english tin pan I'll sell for $350. I had it checked for leaks a year ago but never used it. PM me if you're interested. I've got a few ss welded divided that could work with it as well.

I've used both. The drop flue is slightly simpler but the raised flue gives you a faster boil and more control. Drop flue has 1 float, raised has 2 floats. I prefer raised but it is generally accepted that the choice is mainly personal pref.
