I am in the same predicament as you starting this year. I usually run just under 1" but might bump it up this year a bit since I will now have a RO. If I had a auto draw I don't think I would worry as much.

I don't have an or but know folks that do. And yes they run deeper concentrate levels in their pans particularly the flue pan

I do not run any different. I run about an inch. Drop flue. Boiling 8-14%

I've never used my 30"x10 but the guy I bought my pans from said I should go about an inch with an ro. He concentrated to 8% typically.

I run about 1.5-2" with the ro. Flue pan about an inch above the flies ( raised).

I think typically people doo run deeper. Things happen a lot quicker with concentrate.

I run the same levels with concentrate as I did with raw sap. The only difference is you will make more syrup per hour.

I run 1/2-3/4" over the flues and about 1" in the front pan with 8-14% concentrate. My wife leaves the back pan the same, but she sets the front to about 1.5". Either work fine but the boil rate is slightly faster at the shallower depths.

thanks for all the info,i think I will run about a 1/2''-3/4'' deeper in both pans then work my way down to be on the safe side!

If you have raised flues there is no reason to change level in back pan. No risk of scorch. Just slow evaporation.
