I have a bunch of left over nuts in heat-sealed bags. I have some in the basement that is about 50 degrees and I have more out in the sugarhouse on display, so those are around 15 degrees right now. Is it ok to let them freeze? How long will they keep at those temps?

It depends on how you made them. If you cured the sugar they will keep a long time. If you stirred them to sugar and then bagged them the should be ok. But I would eat them instead of storing them.

When you make coated nuts after you stir them,for long shelf life put them in the oven at 200degs for 2 hrs. I have kept nut for up to a year doing that.

Thanks. Do you freeze them after that or do you keep them at room temp.?

You can keep the at room temp is they are in a sealed package.
