Ok so I have a question, if you are bottling in say 40 gallon SS barrels, how do you keep the syrup 180 degrees from the time you start till the time you close the lid. I understand if you have a large capacity evaporator but what about a smaller evap, do you not use a 40 gal and switch to a 10 gallon or is there a trick.

I have occasionally filled a 40 gallon drum over two days time. If I couldn't fill the drum in one night I capped it tightly the first night and then finished filling it the second. I've never had a problem with the syrup going bad even nine months later when I opened it to can it up. I like your location/address. You got to be in one of them really populated areas of Me. :D :D I've got to check the address in my Me. atlas.

I have packed 30 gal in 2 fillings, but one after the other. I would save product in my finisher until I have over 20 gal in it. Then I run til I have over 10 gal in my draw off tank. Then I heat the finisher to at least 210 and density check, Then I filter thru the press and into the barrel. Then as soon as that is done, I pump the contents of the draw tank into the finisher, bring it to 210 and density check, filter and finish the barrel. If either of the density checks needed more boiling I did it in the finisher, if too dense I added sap to dilute it.
For next season I am setting up a second finisher (both are 16 x 34 x 12 Leader units) facing the first with a funnel bottom mixing/draw tank between them. There I add filter aid and pump it thru the filter press. Now I can fill a 40 gal BBL all at once, with no delay or cooling. Each finisher will hold up to about 28 Gal, but I like to stop at just over 20 because it heats faster.
