I built a Sugar shack this summer, What I was wondering is, How high should my stack be before I 90* and go out the back wall.

You really should go straight throught the roof. The elbow won't last very long and it also reduces the amount of draft you stack has.

I understand your hesitation on going out the roof. Is there a way you could use two 45 elbows to exit the back wall. This will only slightly affect draft. I have used this method since '76 elbows last 3-8 years depending on if you off season cover stays on or not. If you use Air under or over then drafting is not an issue. Custom fab shops will make a stainless elbow if you need. If natural draft the higher the better and at least 6' outside or past the peak should do the job.

Go out the roof, and make the stack at least 2x the evaporator length. If wood fired, use no damper, but it is best having a stack cover of some kind when not being fired, but especially in the off season.

I will have AUF. I was going to use a 22ga elbow? you think I can get a few years out of them8009

Yes two-three provided rain cap is used. Condensation is an issue in off season. Because the pipe is exposed outside it will change temp quicker and cooling on cool evenings following warm muggy days will cause the most condensation.
