Do I have to run my smoke stack straight up thru the roof or can I run it thru the wall

I would go straight out the roof. The more corners you have in the chimney the more restricted the flow is, which results in less draft.

Guess I've never seen anyone run their stack through the wall, though maybe it would work for a small setup.

I run mine through the wall. I have the base stack, two 90's then about 12' of vertical stack. I have a 2x6 evap and use 10" dia stack. I get about 30gph evap rate. It works for me and was easier then cutting a hole in the roof.

Thru the roof is best, but if you are dead set to go thru the wall, I suggest you step up to 1-2" larger and make the elbows 45's not 90's. Then have enough length vertical after the second ell. Also make sure the angled portion is not too close to the cieling. Then shield it extra above to keep the intense constant heat from setting the sugarhouse on fire.
