we are getting our maple products ready for the upcoming fairs. we opened a barrel of light candy syrup to enter. the syrup has a mild buttery flavor. will judges consider this an off flavor? I have a friend that makes alot of lite, and it always tastes buttery.

They shouldn't, is it really a "flavor" or is it more of a buttery mouth "feel"? I've sampled alot of syrup with a buttery "feel" and personally think that it's superior.

Hard to say for sure without tasting it but I would have to agree that the "buttery" nature of light syrup is a good thing.

You guys are both correct. Superior Fancy or light syrup has a buttery flavor---IT"S A GOOD THING!!!

I don't know about the judges, but my trees also make buttery flavor syrup and the customers love it. I always though it has something to do with the soil but I don't know.

well, i got first place with my buttery syrup, even though it was a hair darker than most of the other enteries

If you think it is really great send it to the IMSI meeting with our state representative in October. Getting a ribbon at that event is one of the great accomplishments for any sugar maker.
