made a 2gal. batch of candy, last night. after drying over night, almost all the candy had white spots. NEVER had that problem before. we used a few drops of defoamer instead of butter. could this have been the cause?

More likely the humidity.

Last year, we made a bunch candy that had white spots. First time it ever happened, and it hasn't happened since. I think it was the syrup we were using, but not positive.

it happens every once in a while not possibly humidity, a degree or 2 too high or 2 low or could have stirred a minute longer or a minute less. I don't know!!! they still taste good I do find though that when you get those white spots the candy seems to dry and get stale a little quicker.

made another batch last night. same syrup, same weather conditions, no defoamer. every one came out perfect. have two shows this weekend. truck is all loaded, except for the candy. dont know if the defoamer was the culpret but i won't try it again!
