after my last post I followed everyone's advice. I opened 16 pints of syrup, heated to 195, refiltered, and it is still cloudy....Why. This is the only batch out of 14 that has done this.

Hi Cindee,
That's frustrating. Did you can it while it was still hot from filtering?
I think sometimes new nitre forms along the bottom of the syrup if cold syrup is reheated too quickly. That means that the syrup on the very bottom can be near boiling while the top of the syrup is much cooler. The last two years we've gotten no nitre that I know of. Last year we stirred all syrup while re-heating after filtering. (They say you shouldn't stir the syrup WHILE filtering.) This year we reheated in a big double boiler to prevent hot spots.
While I was trying to figure out the problem two different experts told me that sometimes there is sugar sand that is too fine to be taken out with standard gravity filtering.
If it was syrup for me and my family I'd just leave the niter and not be concerned.
