Who is using paddle machines and who is using the new gear pump machines and how do you like them and the results? We have been using the candy machine to make cream and it is time to upgrade-Thanks for the information

I purchased a CDL cream machine this yr and am selling more cream than syrup. So easy to use and it will pay for its self in less than 15 gallons of syrup ran through it.

There is no comparison between gear pump style and the paddle type. I now have a CDL gear pump cream machine and it is so smooth. Thought I made good cream before but it blows my mind how much better it is using a gearmachine. Invest in that type it will be worth it

I have used a gear pump machine. I will not deny that it makes great cream. I can also make sugar with my paddle machine. I make a lot more sugar than cream and most goes into cotton candy.

I have heard that the gear pump machines stir/spin the syrup too fast for making really good cream. And they heat the cream up in the process. But I have never sampled gear made cream and paddle made side by side, nor have I used either one, so I can't speak intelligently on it. I agree the gear machines seem real slick!

Keith and Woodsman are spot on---you can't beat a gear pump machine. The cream does not separate as fast as paddle cream either.

I assume there's no way to make granulated with a gear machine.

Granulated sugar can't be made with a gear machine. I started with a paddle machine and made cream and sugar both with it,then I got a gear machine. I use both one for sugar and one for cream.The paddle machine makes excellent sugar. The gear machine is best for cream.

We use our candy machine to make cream and it works great. We use our stand mixer to make 1/2 gal batches of sugar...standard kitchen aid mixer and I question how much longer it's going to last if we keep making sugar. Option one is to buy a better mixer, option 2 is to buy something else. I hadn't considered a cream machine to make sugar. How much sugar can you make per batch with a cream machine?
I think I have heard about 1 gallon/batch with Leader's paddle. I can do 2 with my homemade.

I have an older danurand paddle machine that I picked up a few years ago, i can do 1 to 1 1/2 gal it does a nice job.

Might be a dumb question but...do you lose some cream each time in the tube of the gear pump machine or is there a good way to get it all out?

You clean the machine with hot syrup. It melts everything out of the tube and cleans the funnel. Once you have all of the cream melted, drain and follow with hot water for the final rinse.

The Lapierre machines come with a rod with a SS disc in the end to push the extra butter through the tubes. My dealer recommends you make 3 or 4 batches at a time tim minimize wastage and cleanup.

The rod has a straight section for the long vertical piece and a curved section to get the top curve cleaned out too. Anything the rod can't get a butter knife will remove.
