Hi,
Someone has offered to sell me a 3x6 flat pan for a really good price. Until now I've tapped only 36 max and have been boiling on a full size steam table pan.
Would this pan be too big for me? I can tap more trees, but my hopes are to boil the same amount or a bit more, but not be required to boil every weeknight and all weekend like I have been doing. I'd rather collect and boil on the weekends.
I'll likely put up a block arch for this pan next year of I get it.

I'd buy it if it's a good price. Boiling long hours is crazy.

a 3x6' pan would hold 11.2 gallons if you are running one inch deep, so you should be able to boil all your sap down to 11 gallons, then finish on a steam pan or on the kitchen stove.

You could also consider installing a divider in the pan to make a smaller finishing section,
