why does some syrup taste more maplely then others...The syrup I produce tastes more maplely then the guy up the road..Went there for a beer and watched how he does it..all his trees are sugar maples,he boils to 7 degrees above boiling..the syrup looks really good and thick but a little darker then mine and the taste is less mapley..I didn't check the brix:confused:

It all depends on what each individual defines as mapley. There are something like 300 different flavor factors that make up the taste so the variations in flavor are pretty much infinite.

yup, kinda agree that 2013 is not your typical mapley flavor that i'm used to. syrup is good, but the flavor is somehow different. Just canned up 10 gal of fancy and I'm trying to blend a 10 gal batch of medium right now. I needed to put some Adark in the batch to darken it and give it the traditional maople flavor.
